Ingredients:
1 medium-sized bottle gourd (lauki), peeled and diced
1 tablespoon oil (preferably mustard oil)
1 teaspoon cumin seeds
2 tomatoes, finely chopped
1-inch piece of ginger, grated
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
Salt to taste
Fresh coriander leaves for garnish
Instructions:
1. Heat oil in a pan or kadai over medium heat. Add cumin seeds and let them splutter.
2. Add grated ginger, and sauté for a minute until the raw aroma disappears.
3. Add chopped tomatoes and cook until they turn soft, and oil starts separating from the masala.
4. Add turmeric powder, coriander powder, and salt. Mix well and cook for another minute.
5. Add diced bottle gourd (lauki) to the pan and mix everything together. Cover and cook over low
to medium heat until the lauki becomes tender, stirring occasionally. If required, you can
sprinkle a little water to prevent sticking.
6. Once the bottle gourd is cooked through and soft, remove from flame and garnish with freshly
chopped coriander leaves.
Lauki ki Subzi is ready to be served hot with roti or rice.
