Poha (flattened rice) Recipe

Ingredients:

  • 2 cups flattened rice (poha)

  • 2 tablespoons ghee

  • 1/2 teaspoon mustard seeds

  • 1/4 teaspoon turmeric powder

  • 1 teaspoon grated ginger

  • 10-12 curry leaves

  • 1/4 cup roasted peanuts

  • 1/4 cup green peas (fresh or frozen)

  • Salt to taste

  • Juice of 1/2 lime

  • Fresh coriander leaves (for garnish)


Instructions:

1. Preparation:

  • Rinse the poha in a colander under running water for a few seconds. Ensure it is just wet and not mushy. Let it sit in the colander to drain excess water.

  • Gently fluff the poha with your fingers to ensure it is separate and light.

2. Cooking:

  • In a large pan, heat the ghee over medium heat.

  • Add the mustard seeds and let them splutter.

  • Add curry leaves and grated ginger, and sauté for a minute.

  • Add the turmeric powder and stir well.

  • Add the roasted peanuts and sauté for another minute.

  • Add the green peas and cook for 2-3 minutes until they are tender.

  • Add the drained poha and salt to taste. Mix gently to coat the poha with the spices and ghee.

  • Cover the pan with a lid and let it cook on low heat for about 5 minutes, stirring occasionally, until the poha is heated through and well mixed.

3. Serving:

  • Once the poha is cooked, turn off the heat.

  • Squeeze the juice of 1/2 lime over the poha and mix gently.

  • Garnish with fresh coriander leaves and serve hot.
