Ingredients:
2 cups flattened rice (poha)
2 tablespoons ghee
1/2 teaspoon mustard seeds
1/4 teaspoon turmeric powder
1 teaspoon grated ginger
10-12 curry leaves
1/4 cup roasted peanuts
1/4 cup green peas (fresh or frozen)
Salt to taste
Juice of 1/2 lime
Fresh coriander leaves (for garnish)
Instructions:
1. Preparation:
Rinse the poha in a colander under running water for a few seconds. Ensure it is just wet and not mushy. Let it sit in the colander to drain excess water.
Gently fluff the poha with your fingers to ensure it is separate and light.
2. Cooking:
In a large pan, heat the ghee over medium heat.
Add the mustard seeds and let them splutter.
Add curry leaves and grated ginger, and sauté for a minute.
Add the turmeric powder and stir well.
Add the roasted peanuts and sauté for another minute.
Add the green peas and cook for 2-3 minutes until they are tender.
Add the drained poha and salt to taste. Mix gently to coat the poha with the spices and ghee.
Cover the pan with a lid and let it cook on low heat for about 5 minutes, stirring occasionally, until the poha is heated through and well mixed.
3. Serving:
Once the poha is cooked, turn off the heat.
Squeeze the juice of 1/2 lime over the poha and mix gently.
Garnish with fresh coriander leaves and serve hot.
